Simple Vanilla cake

A Very common cake that every baker begins with is a Vanilla Cake /Sponge Cake. Sharing one such recipe today. If you don't like cake with icing on it or less sugary, then this is for you. Plain simple and yet delicious. The Sponginess of the cake comes from the addition of Egg. Sponge Cake can be frosted and decorated for parties or can be had just like that with a cup of Chai.





Recipe: Simple Vanilla cake
Type: Dessert
Preparation time: 10 mins
Cooking time: 35 mins
Total time: 45 mins
Serves: 4-5 people

Dry Ingredients:
  • All-purpose flour - 1 and 1/4 cup
  • White Granulated Sugar - 3/4 cup
  • Baking powder - 1 and 1/2 Tsp
  • Salt -1/8 Tsp
Wet Ingredients:
  • Unsalted butter - 1/2 cup (room tempt)
  • egg - 2 large
  • Milk - 1/4 cup (can add more)
  • Vanilla essence - 1/2 tsp 
Note:
  • All ingredients should be at room temperature for good results.
  • Use appropriate measurement cups for good results. The measurement cups I use here are US standard measurement.
  • Whisking the sugar, butter, and egg very well is the key point to get soft sponge cakes as we get in bakeries.
Preparation:
  • Grease a 9'' cake pan with oil and line it up with parchment paper. Preheat the oven to 180 deg/ 350 F for 10 -12 mins
  • Sieve the flour, baking powder, and salt. Mix it uniformly.
  • In a mixing bowl add butter and sugar beat them until uniform. 
  • Then add egg one by one, after that add vanilla essence mixes it nicely.
  • Now start adding the dry ingredients to the wet ingredients in batches and mix it with a spatula gently. Do not over mix the batter.
  • Pour the batter into the greased pan. Tap the pan gently so that there will be no bubbles form in the cake
  • Bake it in an oven for 25- 30 mins. Please keep an eye on 20-25 mins and check if it's done. Start checking after 25 mins by inserting a toothpick if it comes clear then it's done otherwise keep it for more 5 mins until it comes out clean.
  • Remove the cake from the oven and rest it in the pan for 6-7 mins until the cake became a bit warmer, gently run the knife around the edges of the pan and unmold the cake onto a wire rack. Let it cool completely.
  • Just simply decorate it as above or you can keep it plain.
