Instant Khaman Dhokla (Chickpea flour steam cake)

Khaman dhokla is made out of besan (Chickpea flour). This is a very simple and quick recipe with the available ingredients in our pantry. To make this a full proof recipe do follow the important notes.




Recipe: Khaman Dhokla
Type: Appetizer
Preparation time: 10 mins
Cooking time: 20 mins
Total time: 30 mins
Serves: 3-4 serving

Dry Ingredients:
  • Chickpea flour (Besan) - 1 cup
  • Sugar - 2 tbsp
  • Turmeric powder - 1/4 tsp
  • Eno - 1 and 1/2 Tsp
  • Salt -1/2 Tsp
Wet Ingredients:
  • Water - 1 cup
  • lemon juice/citric acid - 1
  • Refined oil - 1 tbsp
Tadka ingredients:
  • oil - 1 tbsp
  • mustard seeds - 2 tsp
  • cumin seeds - 1 tsp
  • sesame seeds - 1 tsp
  • chopped green chilies - 1 (optional)
  • Red chili powder to sprinkle (optional)
  • curry leaves - 7-8 
  • sugar - 2 tbsp
  • water- 2 tbsp
Note:
  • Tadka ingredients can be changed as per the person's taste or availability.
  • water and sugar part is totally optional in tadka. It will keep the dhokla from drying up.
Preparation:
  • Grease 6" cake tin round or square what you have.
  • Put the cake tin in the streamer on gas with the lid closed and switch on form steam.
  • In a big mixing, blow sieve the floor. This is a very important step this would help not to form the lumber in the batter.
  • Then mix all the remaining ingredients expect Eno.
  • Give everything a good mix. You can use a whisk or an electric mixer just for few minutes. This step will help to form the air and will lighten the batter.
  • After this add Eno in the prepared batter and then add 2 tsp of water and be real quick with this process give the batter a stir to mix the Eno really well and quick.
  • After this pour the batter into the greased Cake tin which is already in the steamer.
  • Let this be steam for 20 mins on a medium flame.
  • After 20 mins, remove the Cake tin and slowly cool down the dhokla. Wait until it's completely cool.

  • Then cut them into pieces.
Tadka:
  • Heat some oil in a pan and add mustard seed as soon as they crackle up add cumin seeds, sesame seeds, curry leaves, green chill, sugar, and water.
  • spread this tadka on to the dhokla so that it won't dry up easily.

  • Serve this as a morning or afternoon snack with tea.
