Chocolate Browine

This is a Brownie with a dry cracker crust, a wonderfully moist texture, and a deep chocolate flavor. Brownies are often classified as "fudgy" or "cakey", yet I would describe this brownie as a cross between the two. They are wonderful plain or I often serve them for dessert with a scoop of vanilla ice cream and chocolate syrup.

Serves: 7-8 people

Dry Ingredients:
  • All-purpose flour - 3/4 cup
  • Chocolate - semisweet or bittersweet chopped 5 oz/150 gm
  • Cocoa powder unsweetened - 2 tbsp
  • Semi-sweet choco chip - 3/4 cup (optional)
  • White sugar - 1 cup
  • Salt - 1/4 Tsp
Wet Ingredients:
  • Unsalted butter - 1/2 cup 
  • egg - 3 large
  • Vanilla essence - 1 tsp 
Note:
  • All ingredients should be at room temperature for good results.
  • Use appropriate measurement cups for good results. The measurement cups I use here are US standard measurement.
Preparation:
  • Grease an 8'' square pan with oil and line it up with parchment paper. Preheat the oven to 180 deg/ 350 F for 10 -12 mins.
  • Melt the chocolate and butter in a large stainless steel bowl placed over a saucepan of simmering water. Remove from heat and stir in the cocoa powder and sugar with a whisk. 
  • Add one by one egg into the mixture with a whisk.
  • Then add the flour and salt mixture in batches into the pan. Add some choco chips for some texture. Mix it gently with a spatula make sure do not over mix it to form air inside the mixture.
  • Add batter to the pan and spread it equally.

 
  • Bake it in an oven for 25- 30 mins. Please keep an eye on 25 mins and check if it's done. Start checking after 25 mins with a toothpick inserted in the center comes out with a little batter and a few moist clumps clinging to it. Do not over bake.
  • Remove the cake from the oven and rest it in the pan for 6-7 mins until the cake became a bit warmer, gently run the knife around the edges of the pan and unmold the cake onto a wire rack. Let it cool completely.
  • Serve at room temperature or chilled with vanilla ice cream or chocolate syrup and enjoy with your loved ones. These can be freeze very well.
