Recipe: Strawberry cake

Serves: 3-4 serving
Dry Ingredients:
- All-purpose flour - 3/4 cup
- White sugar - 1/2 cup
- Baking soda - 1/4 tsp
- Baking powder - 1/2 Tsp
- Salt -1/8 Tsp
Wet Ingredients:
- Fresh strawberry puree - 1/2 cup
- Refined oil - 1/4 cup
- curd - 1/4 cup
- Vanilla essence - 1/2 Tsp
Preparation:
- Line 6" cake tin with parchment paper. Preheat the oven to 350 F for 10 -12 mins.
- To a wide mixing bowl mix add sugar, curd, and oil. Whisk it with an electric mixer or wire whisk. Then add strawberry puree.
- In another bowl sieve flour, sugar, baking powder, baking soda and salt mix everything together to avoid lumps.
- Now add the sieved dry ingredients and mix everything till smooth and soft. Ensure there is no lumps.
- Pour this batter into greased square tin, tap slightly to level and release air gaps.
- Bake in the preheated oven for 25-30 minutes, check for the toothpick doneness a tester comes out clean.
- Allow the cake to cool in a wire rack for minimum 10 minutes, you can serve as this or like I have decorated it with whipping cream and fresh strawberry like in the picture and serve the eggless Fresh strawberry cake with coffee.
Note:
- All ingredients should be at room temperature for good results.
- Use appropriate measurement cups for good results. The measurement cups I use here are US standard measurement.
