Fresh Strawberry cake (Eggless)

This is one of the very good uses of fresh strawberry if you have plenty of them in your pantry. An easy and tasty eggless recipe with simple ingredients available in your pantry.















Recipe: Strawberry cake
Type: Cake
Preparation time: 10 mins
Cooking time: 30 mins
Total time: 40 mins
Serves: 3-4 serving

Dry Ingredients:
  • All-purpose flour - 3/4 cup
  • White sugar - 1/2 cup
  • Baking soda - 1/4 tsp
  • Baking powder - 1/2 Tsp
  • Salt -1/8 Tsp
Wet Ingredients:
  • Fresh strawberry puree - 1/2 cup 
  • Refined oil - 1/4 cup
  • curd - 1/4 cup
  • Vanilla essence - 1/2 Tsp
Preparation:
  • Line 6" cake tin with parchment paper. Preheat the oven to 350 F for 10 -12 mins.
  • To a wide mixing bowl mix add sugar, curd, and oil. Whisk it with an electric mixer or wire whisk. Then add strawberry puree.
  • In another bowl sieve flour, sugar, baking powder, baking soda and salt mix everything together to avoid lumps.
  • Now add the sieved dry ingredients and mix everything till smooth and soft. Ensure there is no lumps.
  • Pour this batter into greased square tin, tap slightly to level and release air gaps.
  • Bake in the preheated oven for 25-30 minutes, check for the toothpick doneness a tester comes out clean.
  • Allow the cake to cool in a wire rack for minimum 10 minutes, you can serve as this or like I have decorated it with whipping cream and fresh strawberry like in the picture and serve the eggless Fresh strawberry cake with coffee.

Note:
  • All ingredients should be at room temperature for good results.
  • Use appropriate measurement cups for good results. The measurement cups I use here are US standard measurement.
